Let our experienced team look after your guests with a delicious range of canapes, experience stations and seated dining options created by Executive Chef, Dion Green,

matched with our diverse beverage selection of beer, wine and spirits.

We have a variety of unique spaces available, providing the perfect setting for your event. As the night winds down, the Watershed and Cohibar comes alive! We have a 24 hour licence 7 days a week.

All Functions are subject to a minimum spend. We can cater for groups up to 300 people (subject to Government COVID Restrictions). All food and beverage purchases go towards this minimum spend.
Minimum spends vary depending on the time of year & the day of the week.

 

THE WATERSHED HOTEL

The Watershed Hotel sits just above the promenade of Darling Harbour giving it a true waterfront feel
with
 a wide variety of spaces to hold your function.

 

The Watershed can be hired exclusively for functions of 200-450 guests.

Hire of both Watershed & Cohibar can accommodate groups of 600 or more. 

There is an external staircase joining both venues.

ENTERTAINMENT AREA

80 - 100 Guests

Caters up to 100 guests for standing events. High cocktail tables available. Contains data projector, large screen and pool table. Theatre style seating option. Also can be connected to Banquettes to accommodate larger groups.

BANQUETTES

20 - 50 Guests

Caters for 20 to 50 guests seated and standing. This area overlooks the Entertainment Area and internal bar space. Ideal for smaller groups, drinks, canapes or bottle service bookings later in the night on weekends.

COCKLE BAY TERRACE

20 - 60 Guests

The terrace overlooks Darling Harbour towards Cockle Bay and the central CBD. Caters for 20 to 60 guests standing and is an outside space with limited covered area. This area can be combined with the Banquettes (see above) to accommodate groups of up to 100 guests.

HARBOUR TERRACE

20 - 60 Guests

The Harbour Terrace overlooks Darling Harbour towards the northern city skyline. It is external with a large glass awning covering most of the area. The area is multi use with the option of stand up events or seated dining.

 

COHIBAR

Sitting above The Watershed, Cohibar offers guests a variety of spaces with views of Darling Harbour and the city skyline. Cohibar is the ideal venue to host a more intimate event, birthdays and social gatherings, hens parties, corporate events and team building.

EXCLUSIVE

Cohibar can be hired exclusively for groups of 100-230 guests,
subject to any government restrictions.

THE LOUNGE

40 - 60 Guests

Located adjacent to the Terrace, the indoor Lounge is a great space for smaller gatherings. Contains data projector and screen for presentations and links to the sound-system for audio visual or speeches. This area has a DJ booth and makes a great dance floor as the night picks up.

THE LOFT

15 - 30 Guests

The Loft is the perfect space for a private gathering including small corporate meetings, presentations, training and parties. Ideal for Hen's nights and private karaoke.

HALF-TERRACE

30 - 45 Guests

The Half Terrace is a stunning outdoor area with cover, making it ideal in any weather for up to 50 guests. Can combine with the Lounge to accommodate 100 guests. It has uninterrupted harbour views.

DJ

Keep the party going with one of our DJ's who can cater to any occasion and re $100 per hour for a minimum 3 hours.

Wait Staff

Why walk up to the bar to get a drink when our friendly staff can do it for you?
Service wait staff are $40 per hour for a minimum of 3 hours.

Cakes

You can bring your own cake. We'll provide a cake table, napkins, plates and a knife for you to cut your cake. Cakeage is $2.50 per person.

Security 

For every 100 guests attending you are required to engage a security guard for the duration of your event for your security and safety of your guests. Security guards are $50 per hour for a minimum of 4 hours. Additional fees may apply for Saturdays, Sundays and Public Holidays. Security are always required for 18th and 21st birthdays.
